Tamale Pie

Tamale Pie- This is so easy and delicious!

1/2 lb lean ground beef
1/2 c onions, chopped
2 c (1 can) red kidney beans, rinsed and drained
1 10 oz can enchilada sauce
1 pkg cornbread muffin mix (I use a small mix like Jiffys)
1/3 c milk
2 T butter, melted
1 egg
1/2 c Colby Monterey Jack cheese
1 small can chopped green chilies
Sour cream (optional)

Brown beef and onions over medium heat until done. Stir in beans and enchilada sauce. Pour into 8x8 pan. (I grease my pan.)

In bowl, stir cornbread mix, milk, butter, and egg until just moistened. Stir cheese and chilies into batter.

Spoon cornbread batter over beef mixture.

COVER with foil and bake at 325 degrees for 1 1/2 hours or until toothpick inserted in center comes out clean. Serve with sour cream if you'd like.

Those with larger families can double this recipe and use a 9x13 pan.
