Chicken Tortilla Lasagna- Jaren likes this recipe because it is a cheesy one!
1 10 oz can enchilada sauce
2 c diced cooked chicken
1 T taco seasoning mix
8 oz sour cream
1/2 c diced green onions
1 c tortilla chips
8 corn tortillas
2 c Colby Monterey Jack cheese
1 small can black olives, chopped
1 c chopped fresh tomatoes
Preheat oven to 375 degrees. Spray 8x8 pan with cooking spray. Reserve 1/4 c enchilada sauce. Combine in a large bowl remaining enchilada sauce, chicken, sour cream, 1/4 c of green onions, and taco seasoning.
Pour the 1/4 reserved sauce on the bottoms of pan. Arrange 4 tortilla pieces on the bottoms of pan, overlap if necessary. Spoon half the chicken mixture over the tortillas, sprinkle with 2/3 c cheese. Repeat layers and cover with foil. Bake 30-35 mins. Uncover and layer broken tortilla chips, tomatoes, olives, and remaining green onions. Top wih remaining cheese. Bake uncovered about 5 minutes. Let stand 10 minutes before serving.
Those with larger families may want to double this recipe and use a 13x9 pan.
